Unfortunately our pastry flours have been discontinued.
As a great alternative to our Super-Fine Pastry Flour, we have our Super-Fine Cake Flour that is currently available on Amazon.
As an alternative to our Whole Wheat Pastry Flour, you can blend our Whole Wheat Flour with either our Unbleached White All Purpose Flour or our Super-Fine Cake Flour in equal parts to achieve a lighter texture. You can adjust these proportions to fit your preference. If you'd rather use only Whole Wheat Flour, try substituting 2 tablespoons of flour with cornstarch for every cup, then mix well. Sifting the mixture will also help to aerate and lighten it.
