Why are there green or black specks in my polenta?

Our Corn Grits and Polenta are milled using yellow corn that is partially degerminated and there can be naturally occurring green or black specs present in the finished product. These specs are small pieces of the germ, which is a nutritious part of the whole corn kernel. This is a normal occurrence. Please be assured that the product is safe to consume.
