Our Corn Grits and our Polenta are partially degerminated, so they are not whole grain or stone ground. Partial is a good way of saying we take away some germ but still leave some in the product we couldn't separate out. This is how traditional corn grits are made, as the germ has too many oils to produce light and fluffy corn grits.
Our Cornmeal products (Medium and Coarse Ground) are stone ground, and the germ is intact, so the cornmeal products are whole grain. The grind (medium and coarse) is something that is strictly determined by BRM standards –not industry. Our granules are quite irregular compared to our competitors, and the vital nutrients of the corn germ and endosperm remain intact in the cornmeal.
